   *RANDOM RECIPE*

Chicken Apricot Soup

 

Chicken Apricot and sweet pot stew.

1 ½ lbs chicken

¼ cup flour

2 tbspn olive oil

1 onion chopped

1 clove garlic minced

1 1 lb can plum toms  with juice

½ cup chicken stock

1 cinnamon stick

1 bay leaf

1 dry hot  red chile

¼ tspn salt

black pepper

2 sweet potatos, peeled and   1 inch chunks

 

8 dried apricots halved

 

 

chicken in plastic bag with flour, shake to coat chicken.  Shake off excess flour.  Dutch oven on stove heat the oil and brown chicken in batches, remove chicken.  Saute the onions in 3-5 minutes.  Add the garlic in the last minute

put chicken back in pan with tomatoes and the stock cinnamon, bay leaf, chile, salt and pepper, cove and simmer for ten minutes over low heat.

 

Add sweet potatos and apricots. Cook for another twety, twenty five minutes.

Remove cinnamon, bay leaf and chile before serving… (serve with some thing green.).
